2 tbsps Cooking oil
1 pc Onion (small), chopped
3 cloves Garlic, minced
1 tin/4.75 oz. Vienna sausage, sliced
5 pcs Whole eggs
Lightly beat the eggs in a mixing bowl and season with salt. Set aside.
Heat oil in a non-stick pan and saute onions and garlic.
Add Vienna sausage and stir cook.
Remove sausage mixture from the pan.
Pour in the beaten eggs and as the eggs set, push the edges towards the center allowing the raw eggs to run on to the hot pan.
Add the sausage mixture at the center of eggs.
Cook until eggs are partially set.
Fold over the omelet and serve immediately.
Waffles Topped with Bananas
1 box Hotcake and waffle mix
4 pcs Bananas, cut into 1/2 inch thick
1/2 cup Walnuts, chopped
1/2 cup Butter
1/4 cup Sugar
1/2 tsp Cinnamon
1 tsp Rum
1/4 cup Water
Boil syrup ingredients in a saucepan.
Add the banana slices. Boil and then simmer until bananas are tender but firm.
Make the waffles according to package directions.
Serve with bananas in syrup and chopped walnuts on top.
